The Backdoor Guide to Short-Term Job Adventures is an amazing and inspirational book I am always referring to.  Its latest edition came out in 2005, but I still recommend reading it.  They also have an online home of current listings:

World Wide Opportunities on Organic Farms is the best way to travel and learn known to mankind.  You can find farms anywhere in the world and then go and work for them while getting room and board.  I have met many of my bestest friends and have many of my fondest memories from “WWOOFing.”

Help Exchange is basically the best website known to mankind.  Similar to WWOOF, a membership hooks you up with amazing people all over the world looking to trade room and board for  help in whatever they do in life.

Mind My House – originally a worldwide house-sitting service connecting travelers to… well, other travelers who have homes and animals that need to be maintained, Mind My House is also often used to find general help when homeowners are still at home, a la HelpX.  Again, a small membership fee is required, but you woudn’t want bad people “house sitting” for you either!

Unschool Adventures has trips typically aimed at ages 14-19, but if you’ve missed that slot they will sometimes admit older students and sometimes will have trips for young adults.  There might also be internship/employment opportunities with them.
